Ginger Fried Rice.

A staple in our weekly rotation; simple, delicious AND packed with nutritious ingredients, definitely a favourite of Theo’s when he’s getting through (yet another) cold. Our family was introduced to this meal through a book we were gifted called “The First Forty Days: The Essential Art of Nourishing the New Mother” by Heng Ou.

Unsolicited mom friend advice: If you are in a hurry to make this dish, try using canned mixed veggies to speed along the cooking process, oh and cook the rice before starting the veggies. If you wanted to add additional protein (the recipe has eggs in it) we like to do this dish after we’ve done a rotisserie chicken dinner, any leftovers goes nicely in this ginger fried rice.

WARNING: If you are making this dish for little ones, there WILL be rice on the floor (and the walls, carpets, BB's hair).

Tik Tok Pasta.

Every mom (or sane person) likes having a few quick casserole recipes ready to go, this is one of ours. It’s easy to put together, plus there’s tons of add-on options (we like adding spinach and zucchini). It does take about 40 minutes to bake in the oven, but I like to think of that as 40 minutes gained to do a little self care until the infamous Tik Tok dish is complete.

3 Ingredient Nutella Brownies.

Chewy, decadent and only THREE INGREDIENTS, need I say more?

: Discovered this simple recipe on the cusp of becoming a stoner, needless to say you CAN use this same recipe to make space brownies, the hazelnut spread does a decent job at masking the marijuana-y taste, just make sure you let people know before sharing.

Pan De Yuca.

Whenever I eat/think/smell pan de yuca, I think of my family back home (🇪🇨), needless to say this recipe is near and dear to my heart. From Laylita’s Recipes (in Spanish but Google will translate for y’all), personally I hand mix the dough instead of using a food processor. 1- because we don’t have one any more (if you have one, FELICDADES!) & 2- con mano lo da sabor/amor😏 (by hand it gives it flavour/love)

Baked Parmesan Risotto.

IMO risotto is the definition of decadence and usually a labour of love, but not with this receta!

Antoni (from Queer Eye & Easy Bake Battle) brought this easier risotto recipe to my life. Seth and I have made it with scallops & mushrooms for our anniversary, and with sweet green peas & champagne for New Year’s! Buen provecho🤤
